Orange-Glazed Sweet Potatoes

We’re taking back thanksgiving and making it not only taste incredibly festive and delicious, but good for you too! Here’s a healthy and amazingly yummy must-have for thanksgiving this year.  These sweet potatoes, or yams if you prefer, are baked with healthy coconut oil and glazed in a honey orange sauce.  No marshmallows needed to make these taters shout “happy thanksgiving!” Serves 4-6

6 medium sized sweet potatoes, peeled and cubed
2 tbsp. coconut oil
salt and pepper
1/2 tbsp. orange zest
1 1/2-2 tbsp. freshly squeezed orange juice
1/3-1/2 cup honey
1 orange, cut into wedges
handful chopped pecans

Preheat oven to 375.  Warm coconut oil in jar by running hot tap water over it until the solid oil turns to liquid.  On a baking sheet, pour coconut oil over potatoes, salt and pepper liberally. Bake for 15 minutes.

While that’s baking combine orange zest, juice and honey in a bowl.  The size of your potatoes will determine how much of each you’ll need so add more or less, just be sure all the taters have enough of the glaze. Top with orange wedges and chopped pecans.  Bake for another 15-20 minutes or until the tops begin to brown and the glaze thickens to a thick syrup consistency. That’s it! Super easy right? Serve warm along with the rest of your holiday feast!
