Cinnamon Apple Crockpot Quinoa

I’ve been on a breakfast kick lately, but breakfast can get mundane with the same old things. So I like to switch it up. This healthy and delicious breakfast is super easy – as in throw it in the slow cooker the night before and forget about it, kind of easy. ¬†This would be perfect for Christmas morning and a great alternative to oatmeal. (Some people with Celiac disease can’t handle even the gluten free oatmeal. This is for you!)
Makes 6 servings

1 cup quinoa, rinsed
2 cups coconut almond milk
1 tsp. vanilla extract
1 small apple, peeled and cut in to small cubes
1/2 cup unsweetened apple sauce
2-3 tbsp. real maple syrup or raw honey
2 tsp. ground cinnamon or 2 cinnamon sticks
dash of salt

Combine all the ingredients in your crockpot. Turn it on the lowest setting and go to bed. Eight hours later when you wake up your breakfast is waiting for you. Perfect for Thanksgiving morning, Christmas morning, or any morning for that matter! Top with extra milk and apples if you like and enjoy!
