Slow Cooker Carnitas!

Looking for a game day dinner that will feed a crowd? When it comes to feeding a big group, anything you can stuff into a corn tortilla is going to be convenient. Anything you can throw into the slow cooker and forget about until you’re hungry is better. Not to mention that everything is made from scratch so you’ll know it’s gluten free and it’s still pretty quick and simple to put together before everyone gets there.

I first made these carnitas when my grandma came for a visit all the way from Arkansas. Of course, my parents, siblings and their families, and my hubby’s family all came for dinner too! It was great to have everyone together and have my grandma meet her tenth great grandbaby. These carnitas were a hit and I got to enjoy myself without being stuck cooking instead of visiting. If you’ve got a crowd coming over for the big game, these carnitas have been tried, tested, and approved. 

I used a dry rub on the meat and then braised it before putting it in the slow cooker.

The Rub:

1 tbsp. smoked paprika

2 tsp. chili powder

1 tsp. cumin

1 tsp. dried oregano

1/2 tsp. turmeric 

1/2-1 tsp. cayenne pepper

1 tsp. sea salt

Combine all the seasonings for the rub in a bowl. Pat the roast dry with a paper towel then dust it with the rub and, yes, start to rub it in. Massage all that goodness into the meat while you heat the olive oil in a skillet. Add the garlic. Your oil should be hot enough that the garlic immediately starts to sizzle. Now put your meat in and brown every side. Once every side is nice and browned remove the meat and set aside. Add the broth to the pan and scrape up all the yummy bits. Pour broth and yummy bits into your slow cooker along with the meat and squeeze the lime juice down over everything. Put the lid on, set it on low heat, and leave it to cook for the next 6 hours or so. 

3-4 lb. boneless beef or pork roast 

1 clove garlic, minced

2 tbsp. olive oil

1 cup beef or chicken broth (MSG and gluten free)

juice from 1 lime

* if using pork, I like to drizzle some honey over the roast before I put the lid on to give it a little bit of a sweet barbacoa taste!

Heat some gluten free corn tortillas on a griddle and put out some fresh pico de gallo, shredded cheese, sliced avocados, shredded lettuce, and whatever else you’d like to top it with. Let everyone make their own as they like while you all cheer for your favorite team!
