Gluten Free Chocolate-Filled Macaroons

Most of the time I would consider myself a planner. I usually prepare and think ahead, but every now and then I'm a "What?! It's already Valentines?" kind of person.  So here's to anyone else who's been caught off guard by this lovable holiday. These {Homemade} gluten-free, chocolate-filled, pink and simple macaroons are the perfect Valentine's Day treat for your someone special...or yourself -- who is also very special. ;) With only 5 ingredients, these macaroons can be whipped together in no time and are sure to impress way more than store bought chocolates. (hint, hint fellas) I made mine bite-sized, but you can make them bigger if you'd like. Here's how you do it...

4 egg whites, whipped

1/2 cup sifted organic coconut sugar or honey (I did half and half)

1-1/2 cups coconut flour

1/4 cups arrowroot starch

food coloring or beet juice

dark chocolate chips, melted (+ a teaspoon coconut oil)

Start by separating the egg whites. Just crack the egg in half and alternate the yoke from side to side, allowing the whites to fall into a bowl.

 Whip egg whites with an electric mixer for several minutes until they become white and stiff. They should form a peak when the beater is lifted out.

Now add your sweetener. I used half honey, half organic sugar, but you can use either exclusively. Sift the sugar through a strainer-sifter to make it nice and fine. Continue mixing until all the sugar is dissolved and the honey is well incorporated. Fold in almond flour. Stir in gluten free (McCormick) food coloring or you could use some beet juice to naturally dye it pink.

Fill a piping bag or a plastic sandwich bag with the corner clipped off with the macaroon mixture. Squeeze the macaroons in a circular pattern onto a lightly greased cookie sheet or parchment paper. Let them sit while you preheat the oven. They should get a light crust on top. Bake at 325 for about 12 minutes.

macaroons1While they're baking put about 1/3 cup chocolate chips and a little coconut oil in a glass bowl. Microwave for a minute or so stirring every 30 seconds until the chocolate is melted. When the macaroons are done and cooled just spread a little chocolate on one cookie and top with another. The chocolate will set as they cool.
