Birthdays, graduations, weddings, anniversaries, Wednesdays... there are so many good reasons to eat chocolate cake. In fact, this recipe came to be this week as we were celebrating my birthday. Earlier this week I had hastily jotted down a recipe for chocolate cake to bring for me and my sister's double birthday party happening later that evening. I love it when it turns out alright on the first try, but love it even more that my family is so patient with my cooking experiments. It still needed a little tweaking.

A quick and simple breakfast muffin that's perfect for any busy morning. This Thursday, however, I'll be serving them as a light breakfast before Thanksgiving appetizers and dinner (gotta save room for pie!) They're simple to make the night before and ready to eat by morning. I have to tweak the recipe for Miah who has to be grain free, but otherwise these muffins get devoured quick. It's fun how you can make memories last with food.

Honey caramel hard candies remind me of simpler days: horse drawn carriages, petticoats, and books that were only read on paper - never on a screen. You may decide to go a little Down Town Abby with your Halloween costume after making a batch. Whatever they remind you of they'll take care of your sweet tooth without any refined sugars, preservatives, fool coloring, or other complicated, unpronounceable ingredients.Speaking of sweets, the holidays are always adorned, sprinkled, and caked in sugar aren't they? It can certainly make it hard to stay true to any kind of healthy, clean diet. This old-school candy is made of good old honey, or for a vegan version you could use pure maple syrup."Well, it's still technically sugar isn't it?" you may be thinking.Yes, chemically honey and cane sugar are both glucose, but honey is also fructose. Fructose is the form of sugar found in fruit and honey in a natural unprocessed state. Besides, you won't find vitamins and minerals in table sugar like you will in the former. The same is true for pure maple syrup as well (not the corn syrup imitation stuff). I figure, if I'm going to have some "sugar" I'd rather have it be as natural as possible.

Cherry Chocolate Energy Bites

These bite-sized balls of yum are packed full of natural protein and fiber, and will give you a kick of energy! They're grain free, gluten free, clean eating, and are easy to make, freeze or refrigerate, and have ready for whenever you need them.I have been experimenting with energy bites for a while now. The inspiration started with my 10 year old son announcing after doing a kid's CrossFit class with his dad that he needed to eat more protein. Haha! I guess the lean and lankiness he inherited from me isn't as much appreciated for a boy.I tried making them out of my Homemade Protein Powder and with different ingredients blended together (which turned out really yummy by the way), but I needed to make some energy bites that were completely grain free as well - in other words, no oats. This inspiration came after realizing that in order for my youngest daughter to enjoy one I had to make a oat-less batch just for her (we've found that with her possible Crohn's and/or Celiac that she feels much better without any grains at all). The inspiration for the flavor came from my husband's birthday cake he requests every year....cherry chocolate!I guess another inspiration is that I'm running my first marathon! A bite of energy to get me started will definitely come in handy on race day.Anyway, regardless of where or how these bad boys came about, now they can be enjoyed by everyone!

{Dairy Free} Chocolate Banana Creamies

Summer showed up out of nowhere! The kids and I have been cooling off by playing in water wherever we can get it along with snacking on some cool treats. As a kid, a special treat in the summer was a Creamy. Have you ever had a Creamy? The originals are made of milk, some sugar and corn syrup, with flavors like chocolate, banana, and orange. Now of course there are probably a few more flavors added to the list, but my favorites were always the originals. My normal homemade popsicle recipe usually is just some blended fresh fruit and/or juice in a popsicle mold, but sometimes I like to go all out. With the strict diet we follow thanks to my youngest daughter, coming up with clean eating, gluten free, dairy free, simple, and yummy substitutes can be tricky. I was so excited when I came up with the recipe for Dairy Free Orange Creamsicles, but I still wanted chocolate or banana Creamies too!  Which got me thinking...why not Chocolate Banana Creamies!? No stove top prep time with these either. Just a blender, some popsicle molds, and a freezer.

  Valentines was one of my favorite holidays as a kid. I loved making secret gifts for everyone, getting love notes from mom, flowers from dad, and little special things from my friends. Inevitably, as you get older some valentines celebrations won't be as sweet- not every valentines, but at least one just to chalk up to experience. Not as a kid though! As a kid valentines is about sweets, heart shaped construction paper cut-outs, kindergarten crushes, and love notes. Here's a little something sweet to send to school in their lunch box along with that love note or to enjoy with whomever you love.

Well, you knew it was coming. It was inevitable really. What, with it being pumpkin season and all, that I'd have to have a pumpkin pancake recipe show up eventually. Here it is! These pancakes taste like you're eating a pumpkin pie for breakfast and are so good for you too. They must have been good (and/or my kids were very hungry) because they were eaten so fast! We also added fun toppings like chopped pecans, sliced apples dusted with cinnamon, and whipped coconut cream on top... or just a little maple syrup works too.

It took a while to wrap my head around the idea that I could use ground nuts to make "breads". Now that I'm getting the hang of it, all kinds of possibilities and variety have opened up.These dinner rolls are filling because they are packed with protein instead of refined carbohydrates. The leaves are changing colors in the mountains, the nights are getting cooler....it must be time for pumpkins! As October approaches there's a few things that you just can't help but notice. 1) Halloween costumes and decorations have taken over every store. (Seriously? Pretty soon they're going to start pushing Halloween right after the 4th of July!)  2) Everyone starts craving warm comfort food like bread and soup, and 3) pumpkins are finding they're way onto front porches and into our dinner and dessert dishes.Speaking of dessert, my mom makes the best pumpkin squares. Every fall she busts out a can of pumpkin puree and whips up this yummy dessert. We already know how good pumpkin is for you with those antioxidants and vitamins found in dark orange fruits and vegetables. Since my mission in the kitchen is to create gluten free food that also has no refined sugar, and will overall be something healthy to fuel my family, I had to make a few changes to mom's original.I wanted a similar look, feel, and taste that I love about mom's pumpkin squares, just without the flour and sugar. This grain free version is dairy free, gluten free, and Paleo. After a little time in the oven these pumpkin squares come out soft, spongy, and won't dry out easily like so many other gluten free desserts.
