Marinated "Rockstar" Drumsticks (gluten free)

Is chicken part of your weekly diet? Ours too.  I like to change it up and have chicken one night, pork, fish, or beef another (organic, free of hormones and antibiotics if you can)- except 1-3 days a week when I prepare a meatless meal. This saves money (because meat can be $$$), plus it's healthy to give it a rest and just eat veggies, beans, rice, or other gluten free grains once in a while.


This dinner, however was not a meatless one. It was more of a "calling all carnivores" kind of dinner. These drumsticks were basted and marinated overnight in my flavorful {homemade} rock-star sauce, then baked to tender perfection. Are your carnivorous taste buds tingling? My kids loved these rockstar drumsticks (pun intended). 


You can serve these guys up with your favorite veggie side like Swiss Chard Citrus Salad, Sweet and Tangy Roasted Vegetables, Waldorf Salad with {Homemade} Raspberry Vinaigrette, Quinoa Risotto Stuffed Vegetables...you get the idea.

8-10 chicken thighs, patted dry, skin on or off (I tried it both ways and its good either no matter what, so however you like it, but skin on won't dry out)

Rockstar Sauce:

2 cloves garlic, minced

1/2 tsp. dried thyme leaves

1/4 - 1/2 tsp. red pepper flakes 
2 tsp. sea salt

1 tbsp. chili powder

1/4 tbsp. smoked paprika

1 tbsp. dried parsley, or 3-4 sprigs fresh

a quarter of a onion (yellow or white)

1 celery stalk

1 tbsp. honey

1 tsp. apple cider vinegar

1/8 cup extra virgin olive oi

1/8 cup water

Put all the ingredients into a food processor or blender until it looks like sauce.

Baste the drumsticks with the sauce and then put them in a plastic container or gallon sized ziploc bag. Let the chicken marinate in the fridge overnight or for at least 2 hours before cooking.

Preheat the oven to 375 and place the chicken thighs on a lightly greased cookie sheet. Bake for 20 minutes, then turn them over and bake for another 20 minutes. Serve em' hot with your favorite side!
