Thai Chicken Lettuce Wraps


Here's to the winding down of a busy school year, spring cleaning and other to-do's that interfere with dinner time. This is a simple, yet healthy and tasty crockpot recipe that you don't even have to dirty a utensil to eat!  This is paleo or keto diet goodness at it's best and easiest.

Thai Chicken Lettuce Wraps


2 lbs. boneless, skinless chicken
2-3 cloves garlic, grated
1/2 inch fresh ginger, peeled and grated
1/2-1 tbsp Thai green curry paste
1/2 cup chicken broth
1/2 cup coconut milk
1 tbsp. lime juice
salt and pepper to taste
one head bib or romaine lettuce, leafs separated or bib lettuce

Garnish with fresh basil and cilantro

Put everything except lettuce into a crockpot set to low for 8 hours.  Shred chicken with a fork when done. Separate lettuce leafs and when you're ready to eat just put a mound of Thai curry chicken in the middle of a lettuce leaf, roll up like a burrito and eat!  Put a bowl of fruit on the table to go along with it and if you have those bread lovers like me make this easy {homemade} wheat bread.  Made even easier if you have a bread maker to do the work for you ;)
