Pecan-Crusted Chicken Tenders with Roasted Red Pepper Dipping Sauce

Maybe it has something to do with sensory development or something, but seriously what is it about  finger foods and kids? I'm not complaining, I'm just wondering why my children opt to use their hands to eat instead of their forks (and I'm not just talking about my 1 year old). Most of the time I demand table manners and the use of modern eating utensils, but to curb whatever primal need they have to use their hands to eat, I make finger food. Over the last several years we've come a long way in teaching our children how to make good, healthy food choices. (Here is our family's 5 Philosophies for Raising Healthy Eaters). No more mystery meat chicken nuggets or bleached wheat flour pizza dripping with cheese. Now-a-days I make made-from-scratch, gluten free finger food that tastes good and is good for you too! Having fun eating it is a bonus ;)

Fresh Paleo Peach Pie

  Fresh peaches are showing up at farmers' markets and grocery stores everywhere now that summer is well underway. I love the smell and taste of a perfectly ripe peach. Mmmm, there is just something about them that requires you to relax.  I love to sink my teeth in and let the juice run down my chin, but there are lots of other delicious ways to serve and enjoy all those summer peaches too....Peach Meringue and Maple Vinegar Glazed Nectarines (or peaches) are some of my favorites for a quick dessert. Making it Paleo (gluten free, grain free, sugar free) eliminates the worry about whether you'll be able to shimmy into your swimsuit after eating it.

Lemon Dill Asparagus

  Today the sky is azure blue. Birds are chirping a sonata of melodies each their own while a lizard does some vertical sunbathing on the back wall. Life in nature always seems so constant, so predictable, and peaceful. I sometimes watch the goings on of the usual wildlife that surround my home and think...I wish I had it that easy. Of course, then I'm reminded of all those Discovery Channel shows that delve into the "real" life of animals and suddenly I'm reminded that their existence isn't easy, just less complicated.

Gluten Free Amaranth Bread

  Busy days with sports, science fair projects, springtime to-dos, and everyday must-dos call for chowder in a crockpot. Tonight I made my savory (and according to my friend Nicole, even better the next day) Chickpea Chowder. The problem, was that I had nothing to dunk and soak up all that yumminess. I used to make THE best focaccia bread from scratch that was perfect with a dish like this. So I had to come up with something dunk-worthy that was equally as savory on it's own.

Marinated "Rockstar" Drumsticks (gluten free)

  Is chicken part of your weekly diet? Ours too.  I like to change it up and have chicken one night, pork, fish, or beef another (organic, free of hormones and antibiotics if you can)- except 1-3 days a week when I prepare a meatless meal. This saves money (because meat can be $$$), plus it's healthy to give it a rest and just eat veggies, beans, rice, or other gluten free grains once in a while.

Double Chocolate Brownies (gluten free, dairy free, and refined sugar free)

With the warmer weather, we've been having more and more get-together's with family and friends lately. My parents were in town and instead of trying to come up with an entire dinner for my family, my parents, and my sister's family we decided to eat separately and join up after for dessert, a mean game of backyard badminton, and card games. Needless to say, my kids were so excited about dessert they didn't "feel very hungry for dinner". I needed to make something that was not only going to be gluten free, but wasn't going to give my kiddos a sugar rush and crash. Oh, one other requirement...it had to be chocolate (per the hubby's request). What does this look like a specialty bakery!? Well, chocolate does sound pretty good right now....so I gave in and made these yummy, refined sugar free, gluten free, dairy free Double Chocolate Brownies!

It's already Valentines?" kind of person.  So here's to anyone else who's been caught off guard by this lovable holiday. These {Homemade} gluten-free, chocolate-filled, pink and simple macaroons are the perfect Valentine's Day treat for your someone special...or yourself -- who is also very special. ;) With only 5 ingredients, these macaroons can be whipped together in no time and are sure to impress way more than store bought chocolates. (hint, hint fellas) I made mine bite-sized, but you can make them bigger if you'd like. {Homemade} Quinoa Tortillas

 I'll be the first to admit that I'm a bit of a nerd. I love reading National Geographic magazine, watching a special on ancient civilizations, or reading articles on the latest health research. So I could probably sit here and tell you all about the amazing benefits of including quinoa in your diet. This ancient seed - yes seed, closer to spinach and beetroot than grain- was the staple diet and sacred food of the Inca's and today has been called a superfood, high in complete proteins as well as other vitamins and minerals. It's also naturally gluten free and easy to digest.Really all I should say is how easy and quick these healthy and delicious tortillas are!

Paleo Chocolate Chip Cookies

We were getting ready to go to grandma's 90th birthday party when I realized that there probably wouldn't be any gluten free treats available there for my daugher. So I found a big ripe banana in the basket of fruit in my pantry, some dark chocolate chips in my freezer, and came up with these delicious gluten free, egg free, paleo, refined sugar free AMAZING cookies!

Garlic Herb Tapioca Rolls

  Everyone has been so helpful and concerned about our little family since the whole "Celiac crisis" took place and I am so grateful for good people who really care.  Like my amazing neighbor - who just so happens to be an accomplished chef, who caters at places like the Sundance Film Festival in Park City, Utah.  She came over one afternoon with a miniature tea set for my girls to play with, her youngest son for my son to play with, and ready to teach me how to make these super yummy and addictive tapioca rolls.  These gluten free, dairy free little guys go fast in this house, especially when I season them up to taste like the cheddar bay biscuits at Red Lobster!  The tapioca flour gives the inside a gooey cheesy effect that is so good! Garlic Herb Tapioca Rolls1 -1/4 cup milk (almond or rice milk)1/2 cup extra virgin olive oil1 1/2 tsp. sea salt 3 cups tapioca flour (also called tapioca starch)1/2 cup amaranth flour or coconut flour2 eggs, tempered1 clove garlic, grated or finely mincedFresh herbs, about 3-4 leafs or sprigs of each or any other combination you'd like, chopped:thyme, parsley & basil Heat milk, oil, and salt in a small sauce pan.  Bring to a boil and immediately pour over tapioca and amaranth flour. Temper eggs in a little of the boiled milk combo before adding to the bowl.  You don't want scrambled eggs in your rolls.  The dough should form into a sticky ball and don't worry if it takes the eggs a minutes to be incorporated, just keep stirring switching to a fork if that helps.  Stir in the garlic and chopped herbs.  Put the dough into the fridge to cool. It will thicken more as it cools.  Preheat oven to 400.  After it's cooled drop by the heaping tbsp. onto a lightly greased baking sheet or into a mini muffin tin.  Bake for about 20-25 minutes or until the top is slightly golden brown and has formed a crust.  The inside will still be a little gooey, but that's okay.  They're best eaten right out of the oven.  If you won't eat them all in one sitting, then freeze the rest. Enjoy!

Rosemary Citrus Salmon & Kale

So this turned out to be the yummiest dish!  I had to pat myself on the back :) This meal is so packed with vitamins, antioxidants, omega 3's and flavorful goodness it's crazy!  The trick to this incredibly moist, flavorful salmon is to pan sear it in some coconut oil and then loosely wrap it in tin foil with the edges pinched tightly closed.  Place it right on the burner to steam in all the flavors of the sweet citrus Oro Blanco grapefruit and earthy rosemary.  Set it on top of some garlic and citrus infused kale and oh my heavens!  Have I talked it up enough?

Peach Meringue

While at my local grocery store I scoped out some big, delicious looking peaches; the last of the summer crop.  I snatched them up and giddily planned for a scrumptious peach pie, Mwahahaha :) But when I got around to making it I was dismayed to discover that I was missing some ingredients that I just didn't feel I could do without.  So, like the theme of my life, I rolled with it and came up with this super healthy and amazingly easy dessert.  It's so simple yet so unique and delicious you'll hardly realize how healthy this decedent dessert is.  And just like the reoccurring theme of life, I usually discover that rolling with it turns out to be just what I needed after all!
