My amazing hubby has started working out and has made a new commitment to eat healthy. But with all the muscle building, calorie burning he’s been doing he needs lots of protein and less processed carbohydrates (a.k.a pasta and bread.) It’s been fun trying to come up with yummy healthy meals without pasta or bread (which I love btw) This may be one of my new favorites.
14 oz. raw large shrimp, shelled and devained
1/3 cup balsamic vinegar
3 tbsp. honey
1/4 cup reduced sodium soy sauce
2 avocado, sliced
3-4 carrots, finely grated
juice of 1 lime
4 large cabbage leafs
Slice avocado, grate carrots and remove 4 large leafs from a head of cabbage. Scoop some carrots and a couple slices of avocado into each cabbage leaf. Combine vinegar, honey, soy sauce and a clove of garlic smashed with the side of a knife to a skillet. Bring vinegar mixture to a simmer then add shrimp. Don’t over crowd the pan. Make sure each shrimp has it’s own section of the bubble bath Cook 2-3 minutes per side until evenly pink. Place a few pieces of shrimp in each spring roll and drizzle sauce over top. Roll up cabbage wrap and enjoy.
