Tuna Quinoa Burger

Here’s another Paleo recipe that will leave you full and satisfied! Top these Tuna-Quinoa Patties however you please for maximum satisfaction

1 can chicken broth
1 lemon, juiced
1 cup quinoa
1 bunch fresh parsley, chopped or 1 tbsp. dried
1/4 tsp. dried dill weed
pinch red pepper flakes
1/2 red onion, finely chopped
1 clove garlic, minced
1 tbsp. Extra Virgin Olive Oil
Salt and pepper to taste
1- 5 oz. can tuna fish packed in water, drained

Make it:
In a sauce pan combine broth, lemon juice, herbs and quinoa.  Bring to a low boil, then reduce heat and allow to simmer about 10 minutes or until the water’s absorbed.  While the quinoa is absorbing heat the olive oil in a small skillet and add the onion, garlic, salt and pepper.  Cook until onions become translucent and slightly caramelized.  Drain the liquid from the tuna.
Now combine everything in your trusty-dusty food processor or quality blender. Pulse away until you begin to get a sticky paste-like consistency.  Don’t over do it, you still want some texture.  While you’re doing that heat a nonstick skillet or griddle. Form the mixture into patties.  You’ll probably get about 4 good sized ones or if you’re feeding little mouths you can make more, just smaller. Drizzle a little olive oil over each patty then place on the griddle to brown and toast on each side.

Top it:
However you like!  I made mine with a little bed of spinach and topped with tomato and avocado drizzled with a little lemon juice, olive oil, salt and pepper.  It’s also good with your favorite salsa or my {Homemade} guacamole salsa.  However you eat it, it’s super yummy and healthy.
