Grain Free Peanut Butter Cookies

 

 

These peanut butter cookies are simple, healthy, gluten free, dairy free, refined sugar free, and packed with protein! I love yard work. I know some of you are thinking I’ve got to be joking, but it’s true. I love mowing the lawn, the smell of freshly cut grass, digging in dirt, pulling weeds, planting things, and watching them grow. My kids love digging in dirt too…and that’s where their yard work ambitions stop. I’m still working on helping them understand and enjoy the process of work and reward.

One day while pulling weeds with Miah she wipes her brow very dramatically after pulling two “big ones” and exclaims, “picking weed is hard work!” Haha! Well that’s probably true too (I wouldn’t know). 

This was our reward today after Tate, my oldest, helped me mow the lawn while Allie watched Dax (Miah helped her too). I needed a sweet reward just as much as the kids, if not more though! After nearly throwing my shoulder out trying to start the lawn mower and telling the kids every few seconds to stop picking the cherries off the neighbor’s tree and throwing them at each other… yard work isn’t quit as relaxing with four little crazies running around!

These PB cookies are quick and easy to make and bakes up in less than 10 minutes. So now I can sit back and enjoy my freshly cut grass while I eat a cookie…and pick up all the cherry bombs!  

1 cup organic peanut butter

1/3 cup raw honey

1/3 cup almond flour (I only had almond meal which worked, but the flour is more finely ground and will give a more even texture)

1/2 tsp. pure vanilla extract

2 eggs, beaten 

1/2 cup dark chocolate chips (opt.)

Preheat the oven to 350.  In a bowl, combine the peanut butter, honey, almond flour, vanilla, and eggs. I was fresh out of chocolate chips, but anything with a little chocolate is better so if you have some toss them in. Now just plop the sticky globs of yummy by the spoonful onto a lightly greased or parchment paper lined cookie sheet. Bake for 8-10 minutes. Remove from the cookie sheet and cool on a rack. Great for dunking in almond milk.
