Valentines was one of my favorite holidays as a kid. I loved making secret gifts for everyone, getting love notes from mom, flowers from dad, and little special things from my friends. Inevitably, as you get older some valentines celebrations won't be as sweet- not every valentines, but at least one just to chalk up to experience.

Not as a kid though! As a kid valentines is about sweets, heart shaped construction paper cut-outs, kindergarten crushes, and love notes. Here's a little something sweet to send to school in their lunch box along with that love note or to enjoy with whomever you love.

Gluten Free Thumbprint Cookies

Makes about 2 dozen cookies

 

*if using unsalted butter add a pinch of sea salt

  1. Preheat the oven to 350.
  2. Stir the dry ingredients together in a bowl. Using a mixer, whip together the eggs, honey, butter, applesauce and vanilla.
  3. Add the dry to the wet ingredients and mix slowly until everything comes together in a ball of dough.
  4. Roll into small balls, lightly press onto a parchment paper lined baking sheet, and then press you thump into the middle to make a small indent.
  5. Bake for 8 minutes. Remove from oven and place about 1 teaspoon jam into each indent. Return to oven and continue baking another 4-7 minutes.
