I love spring! Here in my desert home the trees are starting to blossom and big billowy clouds bring cool rain, turning the sagebrush a lovely shade of green. The inevitable and always inspiring rainbow is bound to show up whenever the sun peeks out.
That can only mean one thing; it's almost St. Patrick's Day! Even though I didn't find any gold at the end of this rainbow me and my kiddos had fun watching the sky and sipping on this clean eating, gluten free, dairy free Shamrock Mint Shake. Don't worry about any artificial colors or sweeteners that you'll find in most other mint shakes you buy from your local drive thru.
Shamrock Mint Shake
It's creamy, sweet, subtle mintiness is perfect as dessert for the whole family, but is just as good as a breakfast smoothie. Serves 4-6
2 bananas peeled, chunked, and frozen
1 can coconut milk (full fat)
1 tsp. pure vanilla extract
2-4 tsp. (or to taste) raw honey
1 cup packed fresh baby spinach, rinsed
3-5 fresh mint leaves, or 1-2 drops Doterra peppermint essential oil
*you could also add some dark chocolate chips for a mint chocolate chip version!
Put everything in a blender until it's smooth and frothy. Pour into jars and drink up with a big fat straw right away.
