It's New Years resolution time. I have so many goals, hopes, dreams, and aspirations. Often, we interpret healthy eating only with losing weight or looking good in a swim suit. Well, I hope you do rock that swim suit this summer and that your goals for health include feeling your absolute best. However, overall any worthy goal requires a healthy body and mind. You are what you eat, so let's fuel our bodies with real, whole foods that will create health for all areas of our lives.
This yummy and simple dish is easy to make. It's a great make-ahead meal to take to work or school and will help you feel full and amazing.
Vegetable Fajitas over Quinoa
Prep time: 5 minutes
Cook time: 15 minutes
Serves: 2 - 3
Seasoned Lime Quinoa:
1 cup white, brown, or red quinoa
1.5 cup vegetable or chicken broth
2 tsp. chili powder
1/2 tsp. cumin
1/2 tsp. dried oregano
1/4 tsp. garlic powder
1/2 tsp. sea salt or Himalayan pink salt
1 Tbsp. fresh lime juice
few sprigs fresh cilantro
Vegetable Fajitas
2 tbsp. olive or coconut oil
1 clove garlic
1 small onion, thinly sliced
2 colored bell peppers (red, orange, or yellow)
1 medium zucchini, cut into matchsticks
Sea Salt, black pepper, and chili powder to taste
drizzle fresh lime juice + 1/2 tsp. zest
Garnish
Romaine lettuce
avocado; peeled, pitted and sliced (lime juice to reduce browning)
fresh salsa or pico de gallo
Directions:
Cook quinoa along with seasoning. Fluff with fork when done and stir in the fresh lime juice and cilantro. While the quinoa is cooking chop vegetables, heat a large skillet with oil and saute on medium-high heat. Season the vegetables as they cook. Check for flavor and add a squeeze of lime + zest if desired. Place some lettuce in a bowl, top with a helping of quinoa, vegetables, avocado, and salsa.
