Busy. Despite the more laid back schedules that seem to accompany summer it’s still so busy! It could possibly have something to do with my hubs getting a job 300+ miles away and trying to be a single mom while he gets things worked out there and now preparing to move…no… that couldn’t be it. Whatever makes your summer busy here’s a quick, simple and healthy muffin for breakfast or snack with no need to even turn on the oven.
Makes one mug muffin:
1/4 cup ground flax seed
1 tsp. baking powder
2 tsp. cinnamon
1 pkg. stevia or 1 tbsp. honey or real maple syrup
1 tsp. coconut oil
1 egg
1/2 banana, mashed with a fork (or about 1/3 cup any pureed or mashed fruit you like. Mix and match and find your favorite)
Other ideas to add: dark chocolate chips, dried fruit, nuts, etc.
Measure out coconut oil and put in microwaveable mug. With your finger, smear the oil around to coat the inside of the mug. Add dry ingredients, mashed banana, egg and any other extra you want to the oiled cup. Mix all ingredients well, you don’t want any funny scrabbled egg looking pieces in your muffin.
Cook in the microwave for 60-90 seconds until muffin puffs up and is cooked through. Grab a fork and eat straight out of the mug. (I like to spread a little honey butter on top and keep the syrup close by for an extra bit of sweetness. Shhh, don’t tell anyone
