Here’s a little something to mix it up for Tuesday taco night. These fish tacos are spicy, moist and super healthy for you. And the best part about taco night is you get to mix and match the toppings to make it your own.
4 Tilapia Fillets, rinsed and patted dry
2 tbsp. coconut oil
couple pinches red pepper flakes
garlic salt
chili powder
juice from 1 lime
8 corn tortillas
Since fish is pretty speedy to cook, start by heating some coconut oil in a pan and getting those tortillas nice and toasty warm. Cover with a paper towel or lid to keep warm. Prep all your garnishes and other good topping such as:
lettuce
tomato
avocado
red onion
green onion
jalapeno
cilantro
salsa
In a large non-stick skillet, heat coconut oil and red pepper flakes. Season fish with garlic salt and chili powder. Cook fish fillets, 3-5 minutes per side (1/2 inch thick = 3 minutes, 1 inch = 5 minutes per side) until flakes easily with a fork. Squeeze fresh lime juice over top. Flake fillets into the warmed tortilla and top as you please. Taco night. Done. Good.
