Eating with the season’s helps prepare your body for transitioning weather (cooling foods for for the warmer weather) and nothing says cool, clean, and spring like a light green salad!
I’m sharing some love today for this yummy, clean eating (and of course, gluten free) Sweet Pea and Avocado Salad I made last night by Amie Valpone at The Healthy Apple. It was the perfect side to dinner and super simple to throw together! No need to fuss with salad dressing, just a little sea salt and ground pepper and you’re set.
P.S. I doubled mine.
Sweet Pea and Avocado Salad
Serves 2
Ingredients
2 cups Earthbound Farm Organic Zen Blend
1/2 cup frozen peas, defrosted
1 small red onion, diced
1 ripe avocado, peeled, cored and thinly sliced
2 tbsp. freshly squeezed orange juice
2 tsp. extra-virgin olive oil
1 tsp. orange zest
2 tbsp. chia seeds
1/4 tsp. sea salt
1/4 tsp. pepper
Directions
1. In a large bowl, combine Zen Blend, peas, onion and avocado; set aside.
2. In a small bowl, whisk remaining ingredients. Pour over avocado mixture; gently toss to combine.
3. Serve immediately.
