The other day my father-in-law told me about the BEST coconut curry sauce that he found at Costco – Maya Kaimal Indian Simmer Sauce. At Costco it comes in a two pack of Coconut Curry and Vindaloo (the coconut curry is probably the one most people know of. You can find the coconut curry here)
He wasn’t exaggerating! I was literally scraping the bowl and wishing I wasn’t so full so I could keep eating! If you love Indian cuisine too, then I highly recommend these simmer sauces. They are VEGAN, GLUTEN FREE, and GMO FREE! Use a Crock-Pot and it’s such a simple way to have a wonderful dinner on a busy weekday.
I decided I’d better do a series about the tastiest, simplest, gluten free, store-bought ways to get a healthy dinner on the table!

Simple Crock Pot Coconut Curry

1 24 oz. container Coconut Curry Simmer Sauce

1 lb. boneless, skinless chicken; cubed

optional: extra coconut milk (to make the sauce stretch for lots of people and/or to reduce the spiciness from medium to mild)
Combine in a 3-quart Crock-Pot
and cook on low for 4 – 6 hours. During the last 30 minutes of cooking, toss in….

1/3 cup frozen peas, thawed

1 large bell pepper, chopped (any color you like)

2 carrots, sliced
-
2 – 3 sprigs fresh cilantro, stems removed and roughly chopped
Serve over steamed brown rice.
And there you have it a simple, store bought meal that’s gluten free, healthy, and delicious!
