Gluten Free Cilantro Lime Coconut Quinoa

Cilantro Lime Coconut Quinoa
- 2 cups quinoa, toasted
- 4 cups water + 1/4 tsp. salt or homemade chicken broth
- 1-2 cloves garlic, minced
- 1/2 tbsp. coconut oil or olive oil
- 1/2 lime, juiced
- 1 green onion, sliced
Heat a large sauce pan and toss in dry quinoa. Lightly toast for a few minutes to bring out the nutty flavor and natural oils. Gently toss the quinoa to give them all a nice toasting. You'll smell it when they're ready. Then add your liquid and salt if using water. Stir in minced garlic and oil. Bring to a boil, reduce heat to low, put a lid on, and let it simmer for about 15 minutes or until the liquid is absorbed. Squeeze in the lime juice, toss in some green onion, and fluff with a fork.
While the quinoa is cooking make the cilantro lime coconut guacamole dressing goodness.
- 2 ripe avocados, pitted and scooped out
- 1/2 lime juiced
- 1/2 tsp. sea salt
- pepper to taste
- 4 tbsp. coconut milk
- 3-4 sprigs cilantro, roughly chopped
In a bowl combine the avocado, lime juice, salt, pepper, and coconut milk. Mash the avocado with a fork as you mix it all together. Stir in the cilantro.
Now pour the green goodness over the quinoa and stir to combine it all. Top with a little more cilantro and lime zest if you want. Serve it warm or cold.
