Mug Muffins
Busy. Despite the more laid back schedules that seem to accompany summer...or winter, spring, or fall for that matter...it's still so busy! Whatever makes your life busy here's a quick, simple and healthy muffin for breakfast or snack with no need to even turn on the oven.

A healthy gluten free, grain free, no refined sugar mug muffin in under 5 minutes.
Ingredients
- 1/4 cup almond flour
- 2 tbsp. ground flaxseed
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 - 2 tsp. honey or real maple syrup
- 1 tsp. coconut oil
- 1 egg
- Optional: 1/2 banana, mashed (or 1/3 cup pumpkin puree)
- Optional: dark chocolate chips, dried fruit, nuts, etc.
Instructions
- Combine all the dry ingredients in the mug and stir together.
- Beat the egg in a separate bowl or just add it to the mug with everything else (just be sure that's it's well incorporated so you don't get scrambled egg in your muffin).
- Combine remaining ingredients and any mashed or pureed fruit, nuts, or chocolate chips you like.
- When everything is mixed well, place in the microwave and cook for 1 and half to 2 minutes.
- Use a butter knife to to run around the edge of the muffin before turning the mug upside down on a plate.
- Slice and enjoy!
We like ours with a little almond butter and jelly as a sandwich for lunch or with a little extra syrup like a pancake for breakfast.
