Oatmeal Pancakes with Maple Peach Puree
Nothing says breakfast like steaming hot pancakes and making them healthy pancakes does nothing but make them taste even better. Then top them with Maple Peach puree and you've got light, fluffy, sweet goodness to start your day off with. Makes 6-8 pancakes.
Oatmeal Pancakes with Maple Peach Puree
1 1/2 Gluten Free Oatmeal Flour, (oats pulsed in food processor until flour-like consistency)
1/2 tsp. sea salt
1/2 tsp. baking soda
1 tsp. cinnamon
2 eggs
1 tsp. real maple syrup or honey (opt.)
2 tbsp. coconut oil
1/2 cup coconut milk or almond milk
1 medium banana, mashed

Maple Peach Puree:
4 peaches, peeled and pitted
1-2 tbsp. maple syrup
Puree in food processor until smooth.
Combine all ingredients in a mixing bowl and whip together until everything is incorporated. Spread a couple teaspoons coconut oil onto a preheated griddle. Using a 1/3 measuring cup pour out your pancakes. You know the routine...golden brown on both sides. Top with the puree and enjoy your breakfast.
