Orange Creamsicles (Gluten Free/Dairy Free)
Hello summer! Time for something cold and sweet! Let's skip the sugar-laden, artificially colored, ingredients-I-can't-pronounce kind of treats and eat something that makes you feel as good as it tastes. Gluten free, dairy free, refined sugar free, delicious Orange Creamsicles!
The best thing about these yummy treats isn't just that they taste amazing...well, yes it is...okay, one of the best things is that this recipe is versatile! You can pour it into Popsicle molds or if you have an ice cream maker you can turn it into Dairy Free Orange Sherbet Ice Cream!
It's creamy, tart, and sweet! Every time I make them for my kids neighbor kids suddenly appear and they're gone before we know it.
Last night we loaded the kids up and made the 5 hour drive, arriving at my parent's house late last night. Phase one of our road trip across the country...check.
My mom and I stayed up to visit and make these yummy popsicles that I would be showcasing and teaching my friends over at Good Things Utah how to make in the morning. It's always fun when I get to share one of my recipes and these are so easy to make!
Here's how you make them ....
Orange Creamsicles/ Orange Sherbet
1 can unsweetened coconut milk (full fat)
1/3 cup raw, unfiltered honey (local is beast)
1-1/2 cup orange juice
1 tbsp. fresh lemon juice
1/8 tsp. sea salt
1 tsp. vanilla extract
1/2 tsp. orange zest
In a medium saucepan heat the coconut milk and honey. Bring to a low boil. Simmer, stirring constantly for about 10 minutes until it is slightly reduced and thickened. Allow the coconut mixture to cool. Add in the orange and and lemon juice, salt, vanilla and zest. Stir everything together and pour into popsicle molds or an ice cream maker.
